Monday
Crispy Coconut Kale with Roasted Salmon & Coconut Rice
I have made this dish a handful of times and love the mix of delicious flavors.
Tuesday
Grilled Skirt Steak/ Portobello Mushrooms with Chimichurri Sauce, Roasted Potatoes
For Tuesday night, I plan on grilling skirt steak for the hubs and mushrooms for myself and serving it with this delicious chimichurri sauce and roasted potatoes. Wednesday
Tuscan White Bean Soup, Via Carota’s Insalata Verde, Frozen La Pettit Francis French Baguettes or any frozen bread
I loveeee Tuscan white bean soup for the warming flavors and packed veggies. I chose this midweek soup for a meatless night that is still filling & satisfying. The Via Carota’s salad is also drool worthy. I have been making this dressing a few times a week and using it on everything. So if you don’t want to deal with all the lettuce in the recipe, just use butter lettuce, romaine, or arugula.
Thursday
Pinch of Yum’s Chopped Chicken Sesame Noodle Bowls

Bon Appetit’s Best Chicken Parm
Bon Appetit’s chicken parm recipe looks a little time consuming but then again that’s why they say it’s the best… I figured it would be good for a Friday night, because what else do we have to do… If you don’t eat chicken, try this eggplant parm recipe, I made it a few weeks ago and it was DELICIOUS!

Garlic Roasted Tomato & Spinach Naan Flatbreads & Kale Salad
I have been dying to try Naan pizzas lately and this recipe looks so good! I also love a good kale salad and this recipe is delicious.
