New Monday Morning Habit: Menu Planning

Hi friends! 

I hope everyone is still safe and healthy! Today, I am sharing my new weekly quarantine habit –  menu planning. Before quarantine, I would go to the grocery store a few times a week. I was never thinking of what I was going to cook more than a night or two ahead of time. However, during quarantine I have been trying to limit ordering groceries to once a week so I don’t have to deal with wiping/sanitizing them all so often. Therefore, on Sunday afternoon or Monday morning I plan the week ahead and order groceries. 

I find that menu planning also helps with cutting down costs and waste. I am only buying what I really need for specific recipes which saves money. Also, we usually then have leftovers for lunch the next day so we don’t waste anything.

It has also been fun to look and try new recipes. I decided to order this cute magnetic pad for our fridge to help me visualize and keep my list organized. I will be honest, it usually takes me 30-45 minutes to meal plan for the week. However, I have been having fun with it. I’ve pulled out cookbooks I haven’t used in awhile, search Pinterest boards, or look through recipes the hubs has sent me on Instagram.

Below are some of our favorite recipes and a mockup weekly plan. 

Monday: Salmon Bowls Recipe Here

I love salmon and usually make it once a week. It’s been on Mondays lately because I want it to be the freshest possible. 

Tuesday: Taco Tuesday – Bon Appetit Chicken Tinga Tostadas Recipe Here

We’ve been sticking with the Taco Tuesday theme lately and we love this tostada recipe. This Salsa Verde Chicken with Mango Pico Recipe is also delicious! 

Wednesday: Cooking Classy Lemon Chicken Orzo Soup Recipe Here

We love this soup and I have been making it regularly for the last year or so. Sometimes, I leave out the orzo and cook wild rice on the side. Then I scoop the rice into a bowl and serve soup on top. We love it with this frozen bread

Thursday: Cauliflower Fried Rice Recipe Here

You won’t even miss the rice with this recipe. Feel free to play around with different veggies and add protein of your choice. It’s delicious with shrimp too!

These are so tasty! Making them this week for sure! 

Sunday: The Shackburger Recipe Here with Frozen Sweet Potato Fries

We’ve made these burgers 2 or 3 times now on the weekend as a fun treat. They are SOO good. 

Cooking Classy No Knead Bread

I have made this bread a few times now during quarantine and it’s so easy and sooo tasty! My husband’s exact words were “why buy bread ever again?” I should make it once a week because it makes for great go-to lunch or snacks.
